"Shiitake Mushrooms - A Nutritious Food With Cardiovascular Benefits"

Shiitake mushrooms have been an important part of Oriental cultures for thousands of years. In fact, they are so popular in Japan; the Japanese derive much of their protein supply from this food.

Not only are they pleasing to the palate, they are highly nutritious, and may alter the outcomes of diseases such as cancer and cardiovascular disease.

They Are Rich In Nutrients

This mushroom has an abundance of nutrients, including all eight amino acids that are included here in better proportions than found in foods such as eggs, meat, milk or soy beans.

In addition, it is a good source of vitamins A, B, B12, C, D, folic acid and niacin.

It is also a good source of the minerals calcium, magnesium, potassium, phosphorus and zinc.

Also, it is low in calories and sodium, and as a good source of dietary fiber.

They Have Anti-Cancer Properties

In 1969, researchers at Tokyo's national Cancer Center research Institute, discovered a compound from this mushroom they named lentinan.

When dosages of lentinan, ranging from 0.5 to 1 mg per kilogram of body weight, were giving to laboratory mice with cancerous tumors, it caused the tumors to decrease in size or totally disappear in at least 80% of those mice tested.

There have been additional studies demonstrating that when 10% of the daily diets of cancerous mice consisted of shiitake mushrooms, the growth of tumors was inhibited almost 40%.

When they were increased to 30%, tumor growth was inhibited almost 78%.

Scientists have concluded that this mushroom increases production of important immune system cells such as macrophages, T-Cells and natural killer cells. '

They also contains compounds that prevent carcinogens being produced from nitrates found in many meats and vegetables.

They Can Help Decrease
Cholesterol Levels

In the 1970s, Japanese researchers discovered that shiitake mushrooms contained an amino acid called eritadenine that reduces cholesterol levels in the blood.

They discovered that eritadenine could lower cholesterol levels as much as 25% in one week.

Additionally, production of a compound that is found in the liver that causes cholesterol to remain in the liver was inhibited.

In a 1974 study of 30 women, 10 of the participants added to their diets 90 grams of shiitake mushrooms and 60 grams of butter, 10 added only the mushrooms and 10 added only the butter.

After one week, the group eating the mushrooms and butter saw a decline in their cholesterol levels of 4%. The butter group saw an increase in cholesterol levels of 14%, while the mushroom only group saw decreases in cholesterol levels of 12%.

They Can Help Fight Viral Infections
As Well

Although shiitake mushrooms probably can't cure the common cold, an extract taken from them called lentinula edodes mycelium (LEM), may have some use as a treatment for serious viral infections, such as hepatitis B and HIV.

In research done at 16 Japanese clinics, a number of patients with chronic hepatitis B were studied.

Their research indicated that LEM caused the body to produce protective antibodies.

40 people with chronic hepatitis B took 6 g of LEM daily for four months.

At the end of the study, the symptoms of hepatitis B were eliminated in all of the participants, and the virus was an inactivated in 15.

Concerning the HIV virus, when shiitake was taken with the HIV medication AZT, it was more effective in controlling HIV than AZT alone.

It is thought that these mushrooms produce interferon, thus explaining their anti-viral benefits.

Side Effects

Although they are generally considered safe, some side effects can occur from eating these mushrooms including diarrhea, abdominal bloating and skin rashes.
